Making Koeksisters

Making koeksisters with lard instead of the usual oil will give them a unique flavor and texture. Here’s a recipe to help you get started:

Ingredients:

– For the dough:

– 2 cups all-purpose flour

– 1/4 cup sugar

– 1/4 tsp salt

– 2 tsp baking powder

– 1/2 cup lard (melted)

– 1 egg

– 1/2 cup cold water (adjust as needed)

– 1 tsp vanilla extract (optional)

– For the syrup:

– 2 cups sugar

– 1 cup water

– 1/4 tsp cream of tartar

– 1-2 pieces of cinnamon stick or a dash of cinnamon powder (optional)

– 1 tsp lemon juice

Method:

1. Make the Syrup:

– In a saucepan, combine sugar, water, and cream of tartar. Bring to a boil while stirring to dissolve the sugar.

– Add cinnamon and lemon juice. Let it simmer for about 5-10 minutes, or until it thickens slightly.

– Once done, remove from heat and let the syrup cool to room temperature.

2. Make the Dough:

– In a large bowl, combine the flour, sugar, salt, and baking powder.

– Add the melted lard, egg, and vanilla extract (if using). Mix well.

– Gradually add cold water to the mixture, a little at a time, until you form a soft dough that is not too sticky.

– Knead the dough on a floured surface for about 5 minutes, then cover and let it rest for 30 minutes.

3. Shape the Koeksisters:

– Roll out the dough to about 1/2 inch thick. Cut into strips (about 4 inches long and 1 inch wide).

– Take each strip and twist it into a braid or fold it in half and twist the two ends together.

4. Fry the Koeksisters:

– Heat lard in a deep fryer or a deep pot to 350°F (175°C). You want the lard to be hot enough for the dough to fry quickly.

– Carefully fry the koeksisters in batches, turning them occasionally, until golden brown and crispy (about 2-4 minutes per batch).

5. Dip in Syrup:

– Once the koeksisters are golden brown, remove them from the oil and immediately dip them into the cooled syrup.

– Let the koeksisters soak in the syrup for about 30 seconds to a minute, then remove and place on a cooling rack.
