Instructions

1. Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to the package instructions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.

2. Sauté Garlic and Chili Flakes

  1. Heat the lard in a large skillet over medium heat until melted.
  2. Add the minced garlic and chili flakes (if using), and sauté for 1–2 minutes until fragrant. Be careful not to burn the garlic.

3. Make the Sauce

  1. Stir in the heavy cream and bring to a gentle simmer.

  2. If the sauce is too thick, add a bit of the reserved pasta water (1–2 tablespoons at a time) until it reaches your desired consistency.
