Ingredients
(Serves 4)
- 300g (10 oz) spaghetti or pasta of your choice
- 2 tbsp lard (high-quality, unprocessed)
- 4 cloves garlic, minced
- 1 tsp red chili flakes (optional, for a bit of heat)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese (plus extra for garnish)
- 1 tsp dried thyme or oregano (or 1 tbsp fresh herbs)
- Salt and freshly ground black pepper to taste
- Fresh parsley (chopped, for garnish)
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.
2. Sauté Garlic and Chili Flakes
- Heat the lard in a large skillet over medium heat until melted.
- Add the minced garlic and chili flakes (if using), and sauté for 1–2 minutes until fragrant. Be careful not to burn the garlic.
3. Make the Sauce
- Stir in the heavy cream and bring to a gentle simmer.
- Add the grated Parmesan cheese, dried thyme or oregano, and a pinch of salt and pepper. Stir until the cheese melts and the sauce becomes creamy.
4. Combine Pasta and Sauce
- Add the cooked pasta to the skillet, tossing to coat evenly in the sauce.
- If the sauce is too thick, add a bit of the reserved pasta water (1–2 tablespoons at a time) until it reaches your desired consistency.
5. Serve and Garnish
- Plate the pasta and garnish with additional Parmesan cheese, freshly chopped parsley, and a crack of black pepper.
- Serve hot and enjoy!
