Traditional Roosterkoek (Roosterbrood) Recipe

Roosterbrood, also known as roosterkoek, is a beloved South African classic—a type of bread cooked over open flames or on a grill. Crispy on the outside, soft and fluffy on the inside, it’s perfect for serving with butter, jam, cheese, or even braaied meat. Here’s how to make this simple yet delicious treat.


Ingredients

(Makes about 10 pieces)

  • 500g (4 cups) all-purpose flour
  • 10g (1 tbsp) instant yeast
  • 1 tsp salt
  • 1 tsp sugar
  • 1 ½ cups (375ml) warm water
  • 2 tbsp lard (softened)

Instructions

1. Make the Dough

  1. In a large mixing bowl, combine the flour, yeast, salt, and sugar.
  2. Gradually add the warm water, mixing with your hands or a wooden spoon until a sticky dough forms.
  3. Knead the dough on a floured surface for 8–10 minutes, or until smooth and elastic.
  4. Work in the lard during kneading, ensuring it’s well incorporated into the dough.

2. Let the Dough Rise

  1. Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1–2 hours, or until doubled in size.

3. Shape the Roosterbrood

  1. Punch down the dough and divide it into 10 equal portions.
  2. Shape each portion into a ball or flatten slightly into discs, depending on your preference.
  3. Cover the shaped dough with a towel and let it rest for 15–20 minutes while you prepare your grill.

4. Grill the Roosterbrood

  1. Heat your grill or braai to medium-high heat. The coals should be hot but not flaming.
  2. Place the dough portions directly on the grill. Cook for 6–8 minutes per side, turning frequently to ensure even browning and prevent burning.
  3. The bread is ready when it’s golden brown and sounds hollow when tapped.

5. Serve and Enjoy

  1. Serve warm with butter, cheese, jam, or even boerewors straight off the braai.
